Vegetarian spring rolls

Spring rolls are one of the western world's favourite recipes from Chinese cuisine. These vegetarian spring rolls are every bit as tasty as the traditional ones.

 

Next, we teach you how to make completely vegetarian spring rolls in the simplest and fastest way. Thanks to the protein provided by bean sprouts, you won't need meat!

 

 

Ingredients:

  • Extra-virgin olive oil
  • Sesame oil
  • 8 spring roll pastry sheets or wafers
  • 30 g bean sprouts
  • 30 ml soy sauce
  • 4 garlic cloves
  • 1 white onion
  • 2 carrots
  • 4 cabbage leaves
  • Sesame seeds

 

 

      Method:

 

  • Add a splash of oil to a wok or frying pan, when it is hot, add, in the following order so that the flavours are integrated, the finely-sliced garlic and the chopped onion and fry well.
  • Add a little bit of sesame oil and then add the grated carrot and the cabbage cut into very thin strips, as well as the bean sprouts.
  • Add the soy sauce and stir fry all the vegetables until they are cooked to your liking (ideally al dente). If the vegetables seem to be very dry or, for whatever reason, they stick to the frying pan, add a drop of water, but take care not to overdo it. It should still be quite thick and not too liquid.
  • Season to taste and, when it's to your liking, put to one side, since this will be the filling of our rolls.

 

To fill the rolls:

  • Take a sheet or wrapper and place it in the shape of a diamond. Brush the corners with water, as this will serve as "glue". Spoon a small amount of filling at the bottom, about two tablespoons, fold the left and right sides slightly inward and roll up. Brush with water the piece of pastry that we have left over at the top and stick down. The rolls are now ready to cook.

 

We have two options to cook them, fry or bake:

 

 

To fry them:

  • Add a good amount of oil to the wok or frying pan and, when it is hot, add the rolls that will take less than a minute to brown on both sides. Take care not to burn them. Remove them from the oil and place on kitchen paper to remove any excess oil. 

 

 

To bake them:

  • Brush the rolls with oil and put them in an oven that has been preheated to 180°. Take them out when brown. This is the recommended cooking method as it's a lot healthier.
